Zeykur Black Olive Varieties: What Sets Elmas, Safir and Premium Taç Apart
All three series ripen in oil-cured brine through natural fermentation and stone pressing; the difference lies in olive size, packaging and salt balance.
Black olives are the most loyal guest at the Turkish breakfast table. They sit beside the morning tea, between the cheese and the tomatoes, and at lunch a few olives with a slice of bread make a satisfying snack on their own. Yet the options you meet on shelves and online stores are often confusing: dozens of olives of the same colour and similar appearance stand side by side, and it is not easy to tell which one suits your table.
Zeykur's black olives ripen through natural fermentation, are prepared in oil-cured brine with stone pressing, and receive no chemical treatment. The three main ranges, Elmas, Safir and Premium Taç, come from the same traditional method; the real difference between them is olive size. Packaging and salt balance also influence the choice. In this post we go through each range's character, how it is used and when to pick it.
Elmas: lightly salted, large olives
Elmas is a large, plump olive selected at XL/L calibre, roughly 201-260 olives per kilogram. The large size gives a meaty bite, and the oily, soft nature of the olive lingers more clearly in the mouth. Its lightly salted profile offers a balance that can accompany every meal of the day, from breakfast to dinner. Because salt does not dominate, the olive's own aroma comes forward; placed on the same plate as cheese, salad or even jam, it does not overpower them.
Elmas is sold in a 1 kg tin, and a 2 kg option is available for families that eat olives often. Tin packaging protects the olives from light and helps preserve freshness. For a household that eats olives regularly, the 2 kg pack can be both practical and economical. After opening, keeping the olives in their liquid and closing the lid tightly is enough to preserve flavour for a long time.
Safir: medium size, intense aroma
Safir is a medium-sized olive at M calibre, roughly 261-290 olives per kilogram. Because the olives are smaller, the taste is perceived as a whole in a single bite; although there is less flesh relative to the stone, the aroma is noticeably concentrated. The medium size does not crowd the breakfast plate, does not get lost among other ingredients in a salad, and serves comfortably on mezze tables.
Safir is sold in a clear jar. This packaging lets you see the olives before you buy them; you can judge the size, colour and shine yourself. The jar can also go straight to the table, which makes it practical for presentation. Being a balanced size for both daily use and entertaining makes it a well-rounded option.
Premium Taç: the largest olives, limited edition
Premium Taç is the largest olive in the range: 2XL/XL calibre, roughly 181-230 olives per kilogram. Olives of this size catch the eye on the plate and give a generous look. Their fleshy structure means more olive per bite, which is one of the main reasons people choose large olives. For a special breakfast, a banquet table or a plate where the olive is served on its own, Premium Taç strengthens the presentation.
Premium Taç comes in a 1 kg tin as part of the "Limited Edition" series. Limited production makes it a product designed more for special moments than for everyday eating. Its elegant look also makes it suitable as a gift, a meaningful and useful present for olive lovers.
Which one should you choose?
The healthiest way to choose is to think first about where and how you will use the olives. If you will eat them at breakfast every day and want a lightly salted taste, Elmas is a logical start for both size and salt balance. If you want a smaller olive, the comfort of choosing by sight in a jar and a balanced size for salads or mezze, Safir will suit you better. For special tables and gifts where presentation matters and large, showy olives are wanted, Premium Taç is the right address.
- Every day, lightly salted: Elmas
- Medium size, chosen by sight in a jar: Safir
- Large olives, special table or gift: Premium Taç
If you cannot decide, Zeykur's Ekstra Set is a good start: Elmas black olives, grilled olives and dry sele black olives in a single pack. That way you can try different characters side by side and find the one closest to your taste.
